I’ve had a few requests for this special Filipino dessert called Mango Float. In another bowl, beat cream until stiff peaks form; fold into mango mixture.

I do agree with another reviewer that this cake may not do justice to really good mangoes - in the future I'd use canned/frozen/not-so-good fruit. It should come out perfect and easy to slice and will not disintegrate.You had me at MANGO! The nice thing about this cake is it is not overly sweet. Also I used frozen mangoes - it was awesome. Ohhh summer. Even after reducing the sugar in the batter to 3/4 cup, this recipe was just sweet. how long the float can last after taken out from the fridge? While fresh mangoes are the best for this – for your last option, you can also use the canned ones.This can also be prepared a day ahead and can be refrigerated until needed.
Total Time. The cake was a very good match for fruit--slightly less dense than pound cake; it could even be served as coffee cake. I added some cherries too since I had really nice ones on hand.
